Chicken is one of New Zealand's favourite foods because it is wholesome, versatile and easy to prepare. It can be cooked in many different ways, either by itself or paired with other foods such as grains, vegetables or fruits. It can be used in appetisers, soups, salads, sandwiches and main dishes.
Always cook chicken well-done, never medium or rare
Insert a skewer into the thickest part of the meat. If the juices run clear, the meat is properly cooked
Ensure chicken is completely defrosted before cooking
Never brown or partially cook chicken to refrigerate and finish cooking later because any bacteria present won't be destroyed. It is safe to partially pre-cook or microwave chicken immediately before transferring it to the hot grill to finish cooking
Do not stuff chicken until just before cooking
Refrigerate or freeze cooked chicken (after steam has evaporated) within 1-1.5 hours of serving
Never put cooked chicken in a container that has stored/come into contact with raw chicken, unless the container has been cleaned thoroughly
Do not re-heat chicken more than once
Always wash work area, utensils and hands with hot soapy water before and after handling uncooked chicken.

section for cooking times for all of our products. Cooking times are based on a pre-heated conventional oven. Fan forced ovens will require marginally less time than those stated. Microwave times are based on a 750-watt oven. BBQ times will vary depending on style of BBQ.
